How I make scrambled eggs

My recipe for scrambled eggs:

3                Eggs
1/4t            Onion Salt
1/8t            Nutmeg
Handful of spinach or kale

Mix together and cook.  

They are amazing!!

Running in humidity....


As I have said before I HATE running in the heat and humidity. But I need to get use to it.  I went out this morning for a short 4 mile run. I'm not sure what the temp was or the humidity, but it was hot and humid. I walked out to the beach for my warm up and took a photo of the sunrise and got to running.

My time wasn't very fast, but that's ok. I've learned that there are three things I require when running outside. Water, Head sweats Sparkle Athletic visor and my handana. Without these three things I wouldn't make it. What do you need when running outside?

Lasagna is on the menu tonight

Tonight we are having lasagna for dinner.

This is our recipe:

Meat Sauce

1lb            Ground Beef
1              Onion
6              Cloves of Garlic
1 pkg        Strained Tomatoes
1 pkg        Chopped Tomatoes
1t             Onion Salt
                Italian Seasoning
                Tomato Paste

Brown the ground beef.  Remove from pan and set to the side.  Sauté the onions and garlic in olive oil.  When cooked add the remaining ingredients.

Cheese Mixture

1 pkg       Frozen Spinach (thawed, drained)
15 oz       Ricotta Cheese
               Parsley
               Onion Salt
               Fresh Parmesan Cheese

Mix all ingredients in a bowl.  The parsley, onion salt and parmesan cheese amount is eyeballed.


The layers:

On the bottom cover the baking dish with the lasagna noodles.  Then add meat sauce, a layer of thinly sliced zucchini, cheese mixture and sprinkle fresh grated mozzarella cheese.  Repeat for as many layers as you would like.  We do two full layers.  On the very top we just add meat sauce.  Bake in the oven covered at 350 degrees for 30 mins.  Remove foil and sprinkle mozzarella cheese on top.  Place back in over for 20 mins.

I use this brand since the only ingredient is tomatoes

Eggs

Almost every morning I have eggs for breakfast.  Usually it's scrambled eggs with something added.  Whether it be kale, spinach or cheese.  But before I run early in the morning I eat hard boiled eggs.  Usually I put them in a bowl and place them in the fridge.  The only problem is my fridge smells like eggs, or as my husband says "Easter."  One day I was at the store and found this 1/2 dozen egg carton.  It is perfect my fridge no longer smells!!

Training Run Recap


Today was my first training run outside since May.  When it heats up here in Florida, I take my running indoors.  I hate running in heat.  After yesterdays 5k I realized I need to get outside.  My pace is off cause of the sun and humidity.  

Today I decided that I wasn't going to try to run fast I just was going to run.  I even stopped to take photos.  

I decided to walk to the beach for my warm up and see the sunrise.


And as always I am wearing my Sparkle Athletic skirt and matching visor.

I stopped by the Cocoa Beach Pier for a quick pic

Ran all the way to Cape Canaveral.  Well it is just 1.5 miles away.

Stopped by the pier once again on the way back.


The last stop I made was at Starbucks.  That was my reward for going 6.1 miles.  Lucky for me it's a 1/2 mile from my house and it makes for a great cool down walk.

Race Recap


Satellite Beach Flag Run

This morning I ran the Satellite Beach Flag Run.  This race was for  National Veterans Homeless Support, Inc. I love running in races that support our military.  This will be my 3rd one of the year.


The start of the race was at 8:10am.  The sun was up and beating down on us.  I am not one who runs in the heat.  During the summer months I run on a treadmill with a window a/c in the room.  So my time was slower than normal.


I finished 4th in my age group.  59th overall.  It was a fun event.  It's always great seeing my running friends on Saturday mornings.  After this race I've decided it's time to go back outside and get use to running in the heat again.  My goal is to go out and do my long run tomorrow morning!




As you can see I'm always a sweaty mess at the end of races.

The night before a race...

Tomorrow I am running the Satellite Beach Flag Run.  I run 5k's most Saturdays but I still have a pre race routine.  At 5am I'm usually not thinking straight so I have set everything out the night before.

Tonight is no different.  Everything is in it's place and all ready for me to go tomorrow morning!  All I need to do tomorrow is make coffee, eat breakfast grab my backpack and run out the door.

My First Post

My First Post


Well here goes my first post!  After I decided to start this blog I kept thinking what should my first post be about.  So I finally decided it should be about me.


I'm a housewife who lives in Cocoa Beach.  I have two dogs and a cat.  I run.  I run a lot.  I'm not fast, but hey someone has to be in the middle of the pack right?  And I love going to the beach!!


Most weekends I am running 5k's.  I do that with the help of a Sparkle Athletic skirt.  I swear they have magical powers that help me run faster.  


I also have food intolerances.  It's a struggle to eat day to day.  I usually can't eat out.  BUT I have a wonderful husband who helps me.  We make most of our food from scratch.  When you can't eat peanuts, tree nuts, sesame seeds, sunflower seeds, artificial sweeteners, corn and corn by-products it gets tough even grocery shopping.  Out of all the things I can't eat, avoiding corn is the worst.

  
I could keep going on and on, but I think I'll stop here for now......:)
