Oatmeal Raisin Zucchini Muffins

These muffins have been my new favorite snack! I have to watch how many I make, because I have been known to eat the whole batch in one day. Oops.....




Oatmeal Raisin Zucchini Muffins

1/2 Cup           Oatmeal
1/4 Cup           Coconut Flour
1/4 teaspoon    Baking Soda
1/4 teaspoon    Salt
1    teaspoon    Cinnamon
Dash                Nutmeg (optional)
2                      Eggs
1/2 Cup           Honey
2 Tablespoon  Unsweetened Applesauce
2 Tablespoon  Grape Seed Oil
1 1/2 Cup        Grated Zucchini
3/4 Cup           Raisins



In a bowl stir the dry ingredients. Oatmeal, Coconut Flour, Baking Soda, Salt, Cinnamon and Nutmeg. Set aside.


In a bowl beat the eggs. Then add, Honey, Unsweetened Applesauce, Grape Seed Oil, Zucchini and Raisins. Mix well.


Add the dry ingredients and stir well.


Fill 6 muffin cups with the batter. Bake at 350 degrees for 30-35 minutes.
